I visited a friend last week who served this amazingly easy side salad along with some tabbouleh over salad greens and a slice of wheat bread:
1 avacado, cut into small chunks
1 tomato, cut into small chunks
Dash of extra-virgin olive oil (more if you want)
Salt and pepper
Mix everything together and serve.
Now that you have eaten a nutritious meal, try this not-so-nutritious Easy Cobbler! (If it makes you feel better, add a tablespoon of wheat germ to the flour. Nobody will be able to tell you've healthified it...not even you!)
